Have the best of both worlds – oatmeal cookies and chocolate chip cookies. Although these soft cookies are more like oatmeal cookies than chocolate chip cookies, they do have a good dose of chocolate in them for all the chocolate lovers' out there. Kick these cookies up a notch and call them Oatmeal Scotchies. By substituting butterscotch chips for the chocolate chips, they'll taste totally unique!

Oatmeal Cookies Tips & Tricks

  • Use the best chocolate chips or chunks that money can buy. It really does make a difference in taste. Likewise, high quality butterscotch chips like Nestle's tastes better than the store brand.
  • Substitute chopped pecans for the walnuts if desired. For the best flavor, toast pecans first. Place whole or halved pecans on an ungreased cookie sheet, and toast in a 350 degree oven for 10-12 minutes, stirring a few times until light brown and fragrant. Let cool and set aside.
  • Omit the chocolate chips and nuts and add 1 1/2 cups seedless raisins for the best oatmeal raisin cookies.

Oatmeal Chocolate Chip Walnut Cookie Recipe

  • 2 cups all-purpose white flour
  • 1 1/4 cup rolled oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon, ground
  • 1/4 teaspoon salt
  • 1/2 pound (1 cup or 2 sticks) butter, softened
  • 1 cup sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup semi sweet or milk chocolate chips
  • 1/2 cup walnuts, chopped

How To Make Oatmeal Chocolate Chip Walnut Cookies

  1. Preheat oven to 350 degrees F.
  2. Prepare cookie sheets by lining them with parchment paper or spraying with vegetable spray.
  3. In a large bowl, combine flour, oats, baking soda, cinnamon and salt. Set aside.
  4. Using a beater attachment and a stand mixer or hand mixer, beat butter on medium speed until creamy.
  5. Add white and light brown sugar and beat until fluffy. Scrape bowl with a rubber spatula.
  6. Add eggs one at a time, then add vanilla and beat again. Scrape.
  7. Turn mixer to low speed and add the flour and oats mixture one cup at a time.
  8. Add chocolate chips and walnuts and give it one final mix. Scrape the bowl good to make sure everything is blended well.
  9. Using a cookie scoop or Tablespoon, measure out cookie dough and place on prepared sheets leaving some room between them to spread.
  10. Bake at 350 degrees for 10-12 minutes or until slightly firm around the edges. Cookies will continue to bake even after they're out of the oven.
  11. Remove to cooling racks and cool completely before storing them in airtight containers.
  12. Makes 25-30 Chocolate Chip Oatmeal Walnut Cookies.
