Oatmeal Cookies Tips & Tricks
- Use the best chocolate chips or chunks that money can buy. It really does make a difference in taste. Likewise, high quality butterscotch chips like Nestle's tastes better than the store brand.
- Substitute chopped pecans for the walnuts if desired. For the best flavor, toast pecans first. Place whole or halved pecans on an ungreased cookie sheet, and toast in a 350 degree oven for 10-12 minutes, stirring a few times until light brown and fragrant. Let cool and set aside.
- Omit the chocolate chips and nuts and add 1 1/2 cups seedless raisins for the best oatmeal raisin cookies.
Oatmeal Chocolate Chip Walnut Cookie Recipe
- 2 cups all-purpose white flour
- 1 1/4 cup rolled oats
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon, ground
- 1/4 teaspoon salt
- 1/2 pound (1 cup or 2 sticks) butter, softened
- 1 cup sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup semi sweet or milk chocolate chips
- 1/2 cup walnuts, chopped
How To Make Oatmeal Chocolate Chip Walnut Cookies
- Preheat oven to 350 degrees F.
- Prepare cookie sheets by lining them with parchment paper or spraying with vegetable spray.
- In a large bowl, combine flour, oats, baking soda, cinnamon and salt. Set aside.
- Using a beater attachment and a stand mixer or hand mixer, beat butter on medium speed until creamy.
- Add white and light brown sugar and beat until fluffy. Scrape bowl with a rubber spatula.
- Add eggs one at a time, then add vanilla and beat again. Scrape.
- Turn mixer to low speed and add the flour and oats mixture one cup at a time.
- Add chocolate chips and walnuts and give it one final mix. Scrape the bowl good to make sure everything is blended well.
- Using a cookie scoop or Tablespoon, measure out cookie dough and place on prepared sheets leaving some room between them to spread.
- Bake at 350 degrees for 10-12 minutes or until slightly firm around the edges. Cookies will continue to bake even after they're out of the oven.
- Remove to cooling racks and cool completely before storing them in airtight containers.
- Makes 25-30 Chocolate Chip Oatmeal Walnut Cookies.
