Gourmet Chocolate Fudge Brownies

Everyone loves a good old-fashioned brownie with a tall glass of cold milk. Gourmet Chocolate Fudge Brownies are so moist and chewy it will be hard to resist just one! But don't stop here! Ingredients & Baking Tips:

  • Gourmet Chocolate: Confused about which chocolate to buy? It is important to buy the very best chocolate you can afford for these brownies. There are so many choices, but the one for this recipe has to be unsweetened chocolate. Ghirardelli chocolate baking bars are a good choice as well as Callebaut chocolate or Baker's chocolate. They come in either 1 ounce squares, a block or in chocolate bars.
  • Baking: Use a 13 X 9 inch greased and floured glass or non-stick baking pan. All ovens were not created equal. Baking time may vary from oven to oven. Always preheat.
  • Easy recipe: This recipe is mixed in one pan for easy clean-up. No mixer is required.
  • Freezing: These brownies freeze well. Make 2 pans and freeze one.

Gourmet Chocolate Fudge Brownie

  • 4) 1 ounce squares unsweetened chocolate
  • 1 cup butter
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 Tbsp vanilla
  • 1/8 tsp salt
  • 1 cup unbleached white flour

Directions:

  1. Preheat oven to 350 degrees F.
  2. Melt unsweetened chocolate and butter in a large saucepan over medium heat. Do not burn. Remove from heat.
  3. Using a wooden spoon or spatula, stir in sugar until well mixed.
  4. Add eggs, vanilla and salt and beat well with spoon.
  5. Fold in flour and mix just until smooth.
  6. Pour into prepared pan.
  7. Bake at 350 degrees for 30-35 minutes or until knife comes out clean.
  8. Cool and cut into squares.

Variations:

Chocolate Chip Brownies: Fold 1 cup chocolate chips into batter and sprinkle a few on top before baking.

Chocolate Walnut Brownies: Fold 1 cup chopped walnuts into batter and sprinkle a few on top before baking.

Cream Cheese Brownies:

1) 8 ounce pkg cream cheese, softened

1/2 cup sugar

1 large egg

1 tsp vanilla

1/4 cup unbleached white flour

Directions:

  1. Make brownie batter as instructed above. Pour into pan but do not bake. Set aside.
  2. Beat cream cheese and sugar in a mixing bowl.
  3. Add egg and vanilla and beat until smooth.
  4. Add flour and mix just until blended.
  5. Place spoonfulls of cream cheese batter on brownies. Cut into brownies swirling into a marbled pattern, using a paring knife.
  6. Add 5 or more minutes to baking time. The cream cheese will be very lightly browned and knife should come out clean.
